Grape Processing

During the winemaking process, the winemaker has to make a lot of decisions, such as:

  • Level of oxygen contact
  • Amount of sulphur dioxide to use
  • Whether to de-stem or not
  • Whether to crush or not
  • Clarification
  • Must adjustment

The choices made will generally be determined by the desired wine style, the state of the harvest and winery infrastructure.
